I prefer a good sourdough bread, but sometimes I have time only for baking an express bread. This is when this Irish Soda Bread is a good option because it would be mixed as quickly as possible since a chemical reaction instantly starts between the ingredients.


In this bread, instead of natural yeast, we use bicarbonate of soda as leaven. The buttermilk in the dough contains lactic acid, which reacts with the baking soda to form small bubbles of carbon dioxide.

Ingredients


  • 300 g plain four
  • 200 g whole wheat flour
  • 1 tsp salt
  • 1 tsp bicarbonate of soda
  • 400 ml buttermilk

Instructions


  1. Mix the dry ingredients in a mixing bowl.
  2. Add the buttermilk gradually. First of all, add half of it, mix the ingredients and add more buttermilk until the dough gets together and becomes a bit sticky.
  3. Bake it in the pre-heated oven at 200 °C for 30 minutes or till it will turn to golden brown and the bottom of the bread is crispy too.
  4. Let it cool on a rack for about an hour then you can start slicing your soda bread.
