The next part of the summer ice lollies series is based on a typical Hungarian flavour combination: curd cheese and lemon! This frozen treat is full of protein, so for me, it's perfectly enough for a morning or afternoon snack between two meals. So let's prep some Lemon & Curd Cheese Ice Lolly!
You can prepare about 4-5 ice lollies from the following ingredients.
Ingredients
Ice lolly base
- 250 g curd cheese
- 4 tbsp greek yoghurt
- 3 tbsp condensed milk
- 1 lemon, zest, and juice
- 1 tsp vanilla paste
Biscuit base
- 6 digestive biscuits
- 2 tbsp butter, melted
- 1 tsp cinnamon
Serving (optional ingredients)
- Biscuit crumble
- Dark chocolate sauce
- 1 thin lemon slice
Instructions
Ice lolly base
- Place the ingredients into a mixing bowl.
- Use a stick blender to mix the ingredients. It's good when you have a smooth, creamy mixture.
Biscuit base
- Combine the ingredients in a food processor.
Assembly
- Fill the ice lolly moulds with the ice lolly mixture, but leave the top half-inch empty.
- Add the biscuit base on top, be careful, do not let it sink too much into the ice lolly mixture.
- Insert the sticks carefully.
- Freeze it for at least 4-5 hours (I normally freeze them overnight).
- Serve it on biscuit crumble, pour chocolate sauce on top then add a slice of lemon.
