Chocolate Mousse is a basic dessert in everyone's repertoire, but to get a light and airy texture it's important to get a really stable egg white foam, but no worries it will be perfect!


Since Halloween parties are on the corner, and after you've already seen the idea of Chocolate-chestnut truffle spiders, this time we will turn this simple dessert into a great Halloween TREAT! These creative moments always help me to relax, focus only on my little edible creatures and nothing else, good old movies or music as background noise... I wish I could do this more often!

Ingredients


Chocolate mousse

  • 150 g dark chocolate
  • 6 large egg whites
  • Few drops of lemon juice
  • 2 tbsp sugar


Halloween decoration

  • Oat biscuits
  • Grey food colouring
  • Cocoa sponge or brownie crumbles or crushed chocolate biscuit
  • Royal icing for skeleton arms and bones

Instructions


Chocolate mousse

  1. Melt the chocolate above hot steam.
  2. Whip the egg whites with the lemon juice drops to soft peaks.
  3. Add the sugar and whip till firm peaks.
  4. Use a whisk and quickly incorporate 4 tbsp egg white foam into the warm chocolate.
  5. Use a spatula and fold in the leftover egg white foam.
  6. Make small portions in glasses or serving bowls and place them into the fridge till the mousse sets.


Halloween decoration

  1. A day before the preparation pipe different shapes with royal icing onto a silicon baking mat: skeleton arms, bones... it's up to you what type of design you wanna see on your mousse.
  2. If the royal icing creations are firm remove them from the silicone mat
  3. Cut a gravestone shape out of your biscuit -if needed-.
  4. Use the grey food colouring on the biscuits, apply with a clean paintbrush.
  5. Use the royal icing and write R.I.P on the grey biscuit pieces.
  6. Push the bottom third of the biscuit into the mousse.
  7. Sprinkle the top of the mousse with the crumbles.
  8. Decorate your dessert with the royal icing creations.
