One of the reasons why I love Autumn is because it's the beginning of the squash and pumpkin season. Let's boost a simple blondie with warming spices, seasonal ingredients and make this Pumpkin Spice Blondie happen! You can get the baking done in half an hour with this effortless dessert, so you will have more time to enjoy the result and your free time!


The best way to enjoy home-baked goods is certainly the moment when we can share them with someone we love. However, it requires some effort and time, but in the end, it is worth every minute to see the happiness on the faces of your loved ones.


What I recommend, is to bake them on a sunny morning when the golden autumnal sun is warming your face in the kitchen while preparing it for a lovely outdoor walk and pop-up picnic with the family or friends, where you can all sit down on a warm wooden stump and enjoy your blondies with a view. Let's hold a competition about who can find a colourful leaf that matches the most with the blondie's colour. The winner can get a second slice!

Ingredients


Pumpkin Spice Blondies

  • 160 g flour
  • 100 g sugar
  • 100 g melted butter
  • 240 g pumpkin puree
  • 1 egg
  • 1 tsp baking powder
  • 1/3 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 pinch salt


Cream cheese frosting

  • 340 g cream cheese
  • 100 g icing sugar, sifted
  • 1 tsp vanilla extract

Instructions


Pumpkin Spice Blondies

  1. First of all, pre-heat the oven to 170 °C (fan).
  2. Simply mix the ingredients with a fork or your hand mixer.
  3. Pour the batter into a lined, deep baking tray (23cm x 23 cm)
  4. Bake the blondies for about 20 minutes.
  5. The next step is to be patient and let them cool down before adding the frosting.


Cream cheese frosting

  1. Soften the cold cream cheese with a hand mixer.
  2. Gradually incorporate the icing sugar
  3. Mix in the vanilla extract.
  4. Chill it in the fridge until the blondie is cool enough to apply the frosting.
